Bacon Wrapped Shrimp with Chipotle Barbecue Sauce

Bacon + Shrimp + Barbecue Sauce…a fabulous, decadent, amazing combination. This is an appetizer, but, it could be used as a small entrée if you provide a side of rice and some salad.

There were a couple of modifications I had to make to this recipe. First, I could NOT find Guy Fieri’s Kansas City BBQ Sauce in stores, nor could I find the recipe – so I had to use another kind. I think I used Sweet Baby Ray’s Maple and something or other…but I am not at home now lookin’ in the fridge, so I don’t know.

Also, I did not grill the shrimp. I wish I had – because I KNOW this would be amazing on the grill – and I promise you this  summer that I will. BUT my grill has been pushed underneath the overhang for the Winter (if you want to even call this a Winter) and it was gonna be a pain to drag back out and clean up. I know, I’m sorry, I am not one of these people who grills come hail, snow, sleet, rain, Hell or highwater.

BUT in the end – this was an AWESOME recipe with a great barbecue sauce that you could use for other things. I was sad when I ate the last shrimp LL

I am ALSO SAD that I can’t find the PICTURE of this recipe! I made some for Rob to have here for lunch at the station – so he will attest that this was a GREAT recipe!
