Queen Korina’s Salad
So, I decided to kill two flank steaks with two recipes…wait that analogy doesn’t work. I wanted to kill one flank steak with two stones…no that doesn’t work either.
What I am trying to say is that I bought one big flank steak and I cut it in half to make two recipes. You might remember my last blog post was the Guy’s Thai Beef Salad – and that was GOOD!
So, what did I use the OTHER half of the flank steak for? I used it for Queen Korina’s Salad. This was the one where I had to simmer the beef in broth for an hour and a half so that I could shred it with forks. I LOVED this because I loved my whole house filling up with the smell of the beef and the broth. Reminded me of childhood where my mother would have something cooking on the stove.
In fact – I remembered when she would make spaghetti and the sliding glass door and the widows would fog up from the steam.
In any case, this salad called for the shredded flank steak to be put over a mix of romaine with vegetables and a home made dressing.
What I loved most about this salad was the dressing. It called for Mexican Oregano. At first I was like “How on EARTH am I going to find Mexican Oregano.” Turns out, it’s not as difficult as I thought- McCormick carries it. But first, I looked in the spice section of the produce aisle of Foodmaxx AND they had it there! So, I threw that in my shopping cart. AND THEN I decided to look in the regular spice aisle and found the McCormick kind. So, I had full intentions of putting the bagged oregano back, but by the time I got to the self checkout thingy…I forgot.
So, I come home and curse myself for buying this plethora of Mexican Oregano! Glad I did though, because the dressing calls for 5 tablespoons (though, I would imagine if you want to adjust this for taste, that might not be a bad idea). I made this dressing like three times over the next few nights as I ate the leftover salad and meat. I LOVED it. You could almost use it on any salad – and it is addicting (like the Waka Waka Salad Dressing)
The funny thing about this was, I read the reviews on the salad online – which I sometimes do with recipes (not often) and some people said that the meat tasted like pot roast. And I was like “wow…it does kind of taste like pot roast” – which can be a good thing or a bad thing depending on what you are looking for. I didn’t mind so much, because I didn’t grow up eating pot roast very much – so it’s not like I was sick of it or had bad memories associated with it. In fact, I’ve never even made a pot roast.
What I would think about with this recipe though…is adding a bit more garlic to the meat when it simmers. You could add lots of other herbs and vegetables to the salad too – so there’s lots of room with this one to play with.
Shrimp and Chicken Tom Kai Guy
The next one was the Shrimp and Chicken Tom Kai Gai. This would be a FUN one to serve for a get together with friends. It’s a soup that requires garnish (mint, cilantro, bean sprouts, thai basil, green onion and chili-garlic paste) It’s VERY easy to make too - which is nice cuz you can impress your friends with your cooking saavy and not spend 900 hours in the kitchen… AND it’s very nutritious with the vegetables in the garnish and the chicken and shrimp. Here is the thing – I made it lower calorie with no-fat and low-sodium broth and low fat coconut milk. If you’re going to make it for guests – add the fat! It will make it more restaurant like and taste a bit better.
That being said, I LOVE homemade soup – so this will be one I might make again down the road. Also – it makes a TON – I’ve been eating it for THREE NIGHTS and once for lunch.
Next up is the Rhode Island Calamari. I think I’ve promised to make that before… but this time- I’m really gonna do it!
